Basil Parmesan Pasta Salad

Ingredients

1 yellow pepper, finely sliced

1/2 small red onion, finely chopped or sliced

1/4 c. black or Kalamat olives

1/3 c. olive oil

1/4 c. white wine vinegar

1/4 c. grated Parmesan cheese

1/2 tsp. basil, dried

1 tbsp or fresh basil

1 pkg 400 g orrechietti pasta

1/4 c. pine nuts

Description

Alternatively you can add 24 med. cooked shrimp or Feta cheese instead of Parmesan

Directions

Cook pasta until al dente, drain, rinse, set aside to cool.

Mix rest of ingredients together and add to paste. Mix well and refrigerate.
